When you want fresh ginger, simply grab a peeled knob and grate it – still frozen – using a microplane grater and directly into the dish, you will enjoy your ginger as freshly as though you just bought them.

Sometimes, don’t bother peeling the ginger first because it is actually easier to peel ginger after it is frozen. Just cut the ginger root into approximately 1 inch chunks. Freeze in a single layer on a plate uncovered, for 1 to 2 hours. Transfer the frozen chunks to freezer containers or bags.

The initial single layer freeze keeps the chunks of ginger from clumping together, so that you can take out only as many pieces as you need at a time.
