How To Make Coconut Candy

Coconuts are the seeds of the coconut palm tree and considered a type of nut. The “meat” of the coconut is high in protein; whereas the milk is refreshing, light and low in sugar. All parts of the tree are useful. Coconut is one of the favourite snack in Nigeria, it could be taken in different ways and it is very beneficial to human health. It could be eaten as it is, it can be fried and it can be made into chocolate balls which is also known as coconut candy.

Below are the ingredients and steps needed to make coconut candy:

Ingredients

  • 1 head fresh coconut with the juice
  • 200g icing sugar (powdered sugar): the sugar can be reduced if you do not like sugary things.
  • Water

Methods

Break the coconut, making sure to collect the coconut juice from it.

Remove the meat from the shells and grate into small pieces.

Pour the coconut juice into the pot.

Add the icing powdered sugar and stir.

Add the tiny coconut pieces and stir.

Add water to the same level as the coconut pieces.

Cover the pot and set to boil at high heat.

Once the contents start boiling, stir continuously till all the water is just about evaporated.

Reduce to low heat and continue stirring.

Keep stirring till the coconut pieces start turning slightly brown.

Turn off the heat and scoop the coconut candy onto a flat plate and leave to cool down.

The candy can be stored in a refrigerator till you are ready for it to be eaten.
