Make The Most Of The Season With The Christmas Table Delight
Growing up, I looked forward to Christmas because of the influx of chicken/meat and drinks. We would spend the morning in church for the Christmas service, but my mind would wander to the food being cooked at home. Christmas was a dream which people often looked forward to every year.
For Christmas only go overboard with the meat, drinks and dessert. People will often drink as much as they can and occasionally check back on the table for something sweet to munch on. Nobody wants to eat four plates of rice but nobody minds eating turkey 10 times, so to avoid wastage don’t fill your table past the initial Christmas lunch fest.
My go-to meals for Christmas are:
Prawn fried rice dish
Prawn fried rice feels special enough for Christmas, however, nothing beats a Smokey Jollof Rice cooked with firewood at the backyard.
The love of spaghetti remains undefeated, through in meatballs and the children would go wild for it, other pasta dishes work such as Pasta bake, Mac and Cheese e.t.c
Children would always say yes to a good pasta dish, even adults.
Salad, plantain and fish
We have those people who show up and would eat only side dishes; I don’t know why but that’s all they ask for; “Do you have salad? Or moi-moi or plantain or fish?”.
Usually, they say they are on a diet or would just want something light to munch on. Be ready for them.
It could be chicken, it could be goat meat, ram meat, turkey, or roast duck but your menu is centred on the meat you pick for Christmas, almost everyone is there for the meat they don’t care whatever choice you make so far you make it well, pick what works best for you and do justice to it!
The buns go missing, it could be garlic buns, coconut bread, plain buns, cornbread; e.t.c but you will find out each time you check the table it’s all gone.
Bread is versatile and can be paired with almost everything on the table, it also works as a plate for those who do not want to commit to carrying one. You can buy bread buns from a store.
It’s always best to mix a healthy drink for the kids to cut down on soda intake, so a large jug or dispenser or something they can easily access and drink from, Zobo is perfect if you do not mind the stains.
Dessert is important but always pick a dessert that doesn’t require special attention like refrigeration, it could easily be forgotten outside or lead to the opening and closing of the fridge which would affect the cooling.
Banana Bread Recipe
Prep time: 10minutes
Cook time: 30-45minutes
Total time: 40-55minutes
Servings: 8-12 slices
• 1 cup flour
• 1 cup sugar
• 1 tsp baking soda
• 1 tsp salt
• 1/3 cup evaporated milk
• 1/4 cinnamon powder (optional)
• 1 cup mashed overripe bananas (3 large bananas)
• 1/3 cup canola/plain vegetable oil
• 2 large eggs
• Chocolate chip/Coconut shavings to top (optional)
• More oil and flour for greasing and dusting the pan
1. Preheat oven at 180C.
2. In a medium bowl, mix dry ingredients (Flour, sugar, salt, baking soda, Cinnamon) pour in milk and mix till it’s wet/soft dough.
3. In the second bowl, mash banana, pour in oil and break eggs, whisk together.
4. Fold with dry ingredient dough till it’s thoroughly mixed, grease pan with oil, and dust with flour.
5. Pour mixture into a pan, add Chocolate chips or top with desiccated coconut if available.
6. Put in a pre-heated oven, allow to bake for 30-45mins depending on the oven, insert toothpick alto check if it’s ready (if it’s still runny it’s not ready yet) allow to cool and serve!
Fruit punch recipe
• Forster Clarke: Half Berries flavour, half pineapple and ginger flavour
• 1 tbsp Lemon juice
• 1-litre water
• 2 tbsp grenadine syrup
• Oranges and lemon (Chopped into four)
• Crushed Ice
1. Mix half a satchel of the Berry Forster Clark with Grenadine Syrup and lemon juice, set aside.
2. Mix the other half of the pineapple and Ginger Forster Clark with 1 liter water.
3. In a large jug put in Crushed iced, freshly cut fruit and pour in Pineapple mixture, top with berry mixture, add fruits to garnish.
Prawn fried rice recipe
• 1-kilo of large prawns
• 1-kilo mini prawns
• 500g frozen mixed vegetables
• 2 cloves minced garlic
• 1 cup rice
• 1 stick unsalted butter
• 1 tbsp fried rice spice
• 1 tsp curry powder
• 1 tsp garlic salt
• 1 tbsp oyster sauce
• 1 tsp fish sauce
• 1 tsp soy sauce
• 1/8 cup vegetable oil
1. Soak rice in hot water for 10-15mins.
2. In a clean bowl wash and shell prawns.
3. Marinate with oyster sauce and fish sauce.
4. In a non-stick pan, shimmer butter with garlic and sauté prawns.
5. Add vegetables to it and sauté with soy sauce for 3-5mins and set aside.
6. Drain and thoroughly wash rice.
7. In a large pot, pour in oil and fry rice with Fried rice spice and curry powder, stirring continuously with a wooden spatula till the rice is a lovely yellowish green colour.
8. Pour in a cup of water and keep topping till rice is soft and water dried.
9. Add in vegetable and prawns stir fry, mix thoroughly (saving some large prawns to garnish).
10. Add garlic salt to taste once it’s to your liking turn off heat and serve.
My final tip for the day? Go disposable if you can! Save yourself the washing and breaking of cups and plates!
