Ramadan Kareem, to all our Muslim brothers and sisters. May Allah grant all our prayers this blessed month. I know that while fasting, cooking can be a real hassle so I’ve come up with some easy recipes that you can make and even keep for a while so you don’t have to cook every day.

The ingredients for these recipes can be found in your kitchen pantry, they are easy to make and they fill you up nicely, check them out below:

Ingredients

  • 20 pieces of diced yam
  • 1 large size dry fish
  • 1 cup of dried prawns (optional)
  • 1 large onion, diced
  • 2 tablespoons of fresh ground yellow pepper
  • 1 large-sized garlic chopped
  • A handful of scent leaves, chopped (optional)
  • 1 serving spoon of palm oil
  • Salt to taste
  • Seasoning to taste

Method

  1. Peel and wash your raw yam, dice them into cubes, not too tiny but not too large either
  2. Boil 2 cups of water till it’s hot, add a pinch of salt and add your diced yams. Boil for 15 minutes
  3. In a smaller pan, pour in a spoonful of palm oil, add sliced garlic, onions and let sauté for about two minutes
  4. Add your dry fish, dry prawns, blended pepper, salt and seasoning cubes
  5. Pour the sauce into the boiling pot filled with yam and stir well. Taste and adjust seasoning if needed. Let boil for another 5 to 10 minutes
  6. Take a masher and mash two or three pieces of the yam in the porridge (this is optional of course; I just prefer it this way)
  7. Add your scent leaves and allow to simmer for 2-5 minutes or until porridge is soft with a creamy paste)
  8. Your porridge is ready, serve as you like and enjoy.
