Homemade Mashed Potatoes…With A Twist
Growing up I really hated potatoes, mostly because of how it was made at my house. As an adult though, I have devised ways of infusing potatoes into my meals as they are packed with lots of nutritious goodness, it contains significant amounts of fibre.
Fibre helps lower the total amount of cholesterol in the blood, thereby decreasing the risk of heart disease. Potatoes are also packed with potassium, vitamin C, and vitamin B6 content.
Potatoes also do not have cholesterol which means you can eat it to your heart’s content. For this recipe, we are going to make spicy mashed potatoes. The pepper flakes will replace the cream/milk that is commonly added to mashed potatoes. Feel free to tweak this recipe, add/remove whatever you want, after all, variety is the spice of life.
- 10 Potatoes (choose the particular type you prefer, for this recipe, I’ll be going with Irish potatoes)
- Salt (A pinch)
- Garlic (blended…not diced)
- Pepper flakes (Two to Three tbsps)
- Butter/vegetable oil (One tablespoon)
- Green Onions for garnishing
- Potato Masher
1. Pour two to three cups of water into a pot on medium heat, add potatoes (your potatoes can be peeled or not, but I cook mine with the peel on), blended garlic and salt cook for 20 minutes or until the potatoes are very soft
2. Once the potatoes are cooked, drain the excess water (retain a little water to be included in the mashed potatoes if it is dry after mashing) transfer potatoes into a large bowl for mashing.
3. With a potato masher, mash the potatoes thoroughly, while mashing, gradually add the pepper flakes, mash well till all lumps are mashed or till you get your desired consistency.
4. Mashed potatoes are better served hot.
