Stil in the spirit of World Vegan Day, which was held on the first of this month, we have three sandwiches for you to try.

These are perfect for a quick Saturday breakfast with your family or one of those mornings when you have to leave your house for work early and don’t have much time to cook. It’s also a good way to start your journey as a vegan (if you’re interested in that).

If you’re not interested, however, these sandwiches are good because they are totally healthy and loaded with nutrients. They are also affordable and easy to make, and you can customise the ingredients to your own taste.

Let’s begin!

Crispy Cucumber Sandwich

Ingredients

  • 1 tsp. olive oil
  • 2 pieces whole wheat bread
  • 2 tbsp. hummus
  • 1 tbsp. chopped olives
  • 8–10 thin cucumber slices

Directions

  1. Preheat a grill over medium heat.
  2. Brush the olive oil on one side of each slice of bread, then turn the slices over so that the oiled side is down.
  3. On the dry side, add one tablespoonful of hummus to each piece of bread. Next, add a layer of olives and then add the cucumbers. Close the sandwich and place in the pan.
  4. Cook for 4 to 5 minutes on each side, or until it begins to brown and grill marks begin to appear.

Vegan Chicken Salad

Ingredients

  • 16 oz. mock chicken strips, cooked and cut into 1/2-inch cubes
  • 2 tsp. fresh lemon juice
  • 1 stalk celery, diced
  • 1/3 cup minced green onions
  • 1 cup vegan mayonnaise
  • 1 tsp. mustard
  • Salt and pepper, to taste

Directions

  1. In a bowl, combine the “chicken,” lemon juice, celery, and onions.
  2. Stir in the vegan mayonnaise and the mustard.
  3. Season with salt and pepper.
  4. Chill and serve.

Green Tomato Sandwich

Ingredients

  • 3 small green tomatoes, cut into thick slices
  • 1/2 cup yellow cornmeal
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 tsp. Cajun seasoning
  • 3 tbsps canola oil for frying
  • Sandwich bread
  • Spread for bread like hummus

Directions

  1. In a medium bowl, combine the cornmeal, salt, pepper and seasoning.
  2. Dredge both sides of each tomato slice in the cornmeal mixture.
  3. Heat the oil in a large sauté pan and fry the tomato slices over medium-high heat until golden brown on both sides.
  4. Set aside on paper towels to drain.
  5. Spread hummus or any other spread of your choice thinly on your bread. Layer your green tomatoes in it.
  6. Enjoy!
