These Onions Are “Tearless”
The festivities of the season have fully begun and this means a lot of families are cooking as probably cooking right now. One of the most annoying things about cooking is the tears that come with chopping onions.
It took some time, but scientists have finally found a solution to this problem. The tearless onion– which has been named the Sunion- is sweet and crunchy and unlike regular onions, it won’t make you cry.
In normal onions, tears come as a result of a volatile compound called lachrymatory-factor synthase that is released and when it hits your eyes, your body produces tears to reduce the irritation. In normal onions, the concentration of this compound either stays the same or increases over time but in the Sunions, it decreases over time.
They were not created by any genetic modifications but by natural crossbreeding in a program that took over three decades to be completed. Currently, they are only being grown in Nevada and Washington and will be harvested at the from the end of December to March or April depending on supply.
