Try This Tasty Plantain Omelette For Breakfast

If you’re anything like us and you’re a lover of plantain and exciting new dishes, then this is one recipe you should try. The plantain omelette is a step away from your traditional Nigerian dish, while still using your normal ingredients. It will also leave you with a chef cap on your head, bragging rights and the perfect tool to use in the art of seduction this weekend.

The plantain omelette merges plantains and eggs one piece, and can arguably replace pizza for exotic breakfast.

Ingredients

  • 1 ripe plantain
  • 2 eggs
  • Processed meat or fish(mashed), hot dog(mashed or diced) or seafood(diced)
  • ½ fresh tomato
  • ½ medium onion
  • ½ tsp salt
  • 2 tbsps green peas
  • A few leaves leafy vegetables (ugu, spinach, scent leaves)
  • Vegetable oil or butter
  • Habanero pepper (optional)

Instructions

  1. Peel and dice the plantain. Fry until golden and set aside.
  2. Slice onions, habanero pepper and leafy vegetables, and chop the satis and tomato.
  3. Break the eggs, add salt and beat. Set aside
  4. Fry the onions in a small quantity of vegetable oil for 1 minute, then add the tomato, meat or fish and green peas and stir-fry for 2 minutes.
  5. Add the fried plantain, then stir.
  6. Spread out the mixture across the pan.
  7. Pour the egg over the mixture in the pan, lower the heat to allow it simmer and pop. Use a wooden spoon to lift it at the tips and flatten the surface at intervals till it is slightly brown.
  8. Shake your frying pan from time to time and once the plantain omelette cakes all over, gently transfer it to a flat plate.
  9. Slice up like pizza and serve.
