When I was three years old, hanging out with my grandmother, I had a craving for cookies – also known as ‘biscuits’ in every other part of the world but North America. So, I asked, ‘grandma, can I have biscuit?’ because I knew she always had a secret stash. To cut this long story short, I ended up with ‘shuku shuku’.

‘Shuku shuku’ also known as coconut candy brings back some of those great childhood sugar craving moments. As Christmas is right around the corner, we are bound to get bored of the usual collection of supermarket biscuits. This recipe comes in handy especially with endless visitations from friends, family and a house full of children.

Ingredients

  • 1 cup unsweetened coconut flakes
  • 2 egg yolks
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour

Preparations

  • Mix coconut flakes, egg yolks and sugar thoroughly in a small bowl.
  • Roll into bite-sized balls then roll in flour.
  • Preheat oven at 375F.
  • Place shuku shuku on a baking tray (on baking paper or lightly sprayed with cooking oil).
  • Bake for 15 minutes or until it turns slightly golden.
  • Set aside to cool and store in an air-tight container.
