Lyonnaise means “from Lyon”, or “Lyon-style”, after the French city of Lyon.

Recipe for 2 servings
• 4 potatoes
• Salt and seasoning to taste
• 2 tablespoons of butter or margarine
• 1 onion (diced)

Preparation
Peel and cook the potatoes whole in plenty of boiling, salted water for 15 minutes. Drain and cool. Slice the potatoes evenly. Fry the potato slices in the butter or margarine until crisp and golden. When two-thirds cooked, add the onion rings and continue cooking until they are softened. Garnish with chopped parsley and serve immediately.
