Imagine how glorious your day would be if it started with eggs, bacon, Lettuce, tomatoes and avocado. This recipe is known as the B.L.A.T Omelets Wrap. It is a great recipe to impress family or friends and leave every one asking for more. Oh yes! It is that good.

Basically, this recipe is just some eggs topped with Bacon, topped with Lettuce, topped with Avocado, topped with Tomatoes; and Vooala! Breakfast is ready. It all comes together in 20 minutes. Quickest breakfast/brunch/dinner you will ever think of. And it can feed every member of the family. All you need do is keep topping up for large numbers, till it serves the whole family!

B.L.A.T Omelette 3

Ingredients

4 slices center-cut bacon, halved

1/2 ripe medium avocado

1 tablespoon chopped fresh basil

1 1/2 teaspoons mayonnaise

1/4 teaspoon finely grated or minced garlic

1/8 teaspoon salt

1/8 teaspoon ground pepper

4 slices sprouted-wheat bread

1 small tomato, cut into 4 slices

2 romaine leaves

1/2 cup alfalfa sprouts

B.L.A.T Omelette 2

Preparation

Cook bacon in a large skillet over medium heat, turning once, until crisp, 5 to 10 minutes. Transfer to a paper towel-lined plate. Mash avocado in a medium bowl. Stir in basil, mayonnaise, garlic, salt and pepper. Toast bread.

Spread about 2 tablespoons of the avocado mixture on 2 slices of toast. Top each with 4 pieces of bacon, 2 tomato slices, a lettuce leaf, 1/4 cup sprouts and the remaining toast.

Drizzle the chili sauce over the omelettes. Add the vegetables and fold up the bottom half and then fold over again.
